
This is one of my go to meals, I change it up often, but I do have a recipe because I’ve made it so many times!
Ingredients
1 package of pasta (I use gluten free)
1 bunch of broccolini, quartered lengthwise)
3 cloves garlic, finely chopped
1 tomato, diced
2 tbsp olive oil
1/3 cup white wine
1 cup pasta water
1 tbsp butter (I use smart balance)
1 tbsp fresh basil, chopped
Salt, pepper, thyme, red pepper flakes to taste
Directions
Cook pasta according to package. In a large sauté pan, cook garlic & red pepper flakes in olive oil for 2-3 minutes over medium heat. Add broccolini to pan, season with salt, pepper & thyme, cover pan and cook 1-2 minutes. Add white wine and pasta water, bring to a boil, reduce heat to low, cover and cook for 5 minutes.
