It’s amazing how much you can accomplish when you put your mind to it. Just the other day, I decided that it was time to tackle the potatoes I received from our food bank. With determination and a lot of elbow grease, I was able to process 70 pounds of potatoes in no time.

It was a daunting task, but seeing the end result was so incredibly satisfying. 37 canning jars later, we have officially restocked our pantry with potatoes for the upcoming season. It’s moments like these that remind me of the importance of being self-sufficient and taking charge of your own food supply.

I can’t wait to see what other challenges lie ahead and I’m looking forward to sharing my experiences with all of you. Until then, let’s all remember to keep pushing ourselves to be the best we can be and to always stay resilient in the face of adversity. Happy harvesting!
