Summer is almost here and I’d like to share one of my favorite dinners with you.

For the Tacos you need:

• pulled pork
• shredded pepperjack cheese
• bbq sauce, I use Sweet Baby Ray’s
• pecans
• craisins
• coleslaw
• flour tortillas

1. Prepare your pulled pork. May I suggest this recipe?
2.  Prepare your coleslaw. I admit to buying mine already made.
3. Are you ready for the easy part? Load your shells up with pork, top with coleslaw, a few pecans, craisins…viola
4. Delicious.

For the Salad you need

• 2 handfuls spinach
• 1 handful kale
• 2 large carrots
• 1 cucumber
• feta cheese
• 1-2 mandarin oranges
• craisins
• pecans

1. Toss and use your favorite dressing. I suggest a vingairette.
